Dock croquettes

  • 400 gr Fresh dock
  • 2 Spring Onion
  • 6 Leaves fresh Mint
  • 200 gr White cheese
  • 4 Eggs (M or L)
  • 200 gr Sunflower oil


  • Wash, drain and cut the dock.
  • Chop the onion and mint.
  • Blanche the dock.
  • Mix the dock, onion, mint, cheese and eggs in deep bowl.
  • Put the oil in the pan and heat.
  • Make croquettes grabbing from mixture and formatting with fingers.
  • Fry croquettes till gold colour appears.
  • Put fried croquettes in plate covered with kitchen roll to drain from oil.


Serve hot or cold with yogurt on iceberg lettuce leaves kanape.
